Living Solo: Ham Timble

Living solo (or empty nesting) doesn’t have to mean surviving on a diet of microwaved meals and canned soup. Let’s elevate your culinary experience with some simple yet delicious recipes that will bring a comforting warmth to your meal preparation.

Ever thought about giving that leftover ham a tasty makeover? Whether you grind it up yourself or opt for the convenience of pre-cubed ham, the possibilities are endless. Picture this: ham timble, a fluffy omelet, or perhaps a cheesy mac and cheese, all enhanced with the savory goodness of ham. Bonus! Cubed ham can be frozen, and grab some to use when needed.

Now, let me share one of my all-time favorites, a dish that graced our family table often while I was growing up. This gem is perfect for those post-holiday ham leftovers. With just a few ingredients, you can whip up a satisfying meal that’ll leave you craving more. It’s a culinary hug in a plate, and who wouldn’t want that, especially when living solo?

Ham Timble for One

1 TBSP butter
2 TBSP bread crumbs
1/3 cup milk
1 1/2 tsp parsley flakes (fresh is preferred or dried)
1 egg
1/2 cup finely chopped or ground ham
salt and pepper to taste.

Heat oven to 350º.  In a saucepan, melt butter and add bread crumbs and milk. Cook for 5 minutes, stirring constantly. Add ham, parsley, and slightly beaten egg. Turn into an individual mold or custard cup. Set in a dish of hot water and bake for 20 minutes or until a table knife comes out clean from the center.   You can double the recipe for two. Reheats well.
