Living Solo: Chicken Noodle Casserole

The cold days of January in Georgia make me want to curl up by the fireplace in a warm blanket and binge-watch my favorite shows. I also want to eat comfort food like my mother and grandmother made during the winter months. So, how can you go wrong with a casserole?

These one-dish wonders have been warming hearts and filling bellies for ages. In the early 20th century, casseroles started making waves in American kitchens, bringing convenience and creativity together. Imagine busy households embracing the idea of tossing leftovers and pantry staples into a single dish for a fuss-free, hearty meal. Casseroles became the unsung heroes of potlucks, family gatherings, and weeknight dinners. From tuna noodle to the classic green bean casserole (hello, Thanksgiving staple!), these dishes evolved, adapted, and found a cozy spot in our culinary traditions.

You can use leftover chicken or pre-cooked frozen chicken or purchase a rotisserie chicken broken up for a few meals ( a favorite shortcut of mine with those low-cost chickens from Sam’s Club).

This recipe makes enough for two people or two meals. Add veggies or a salad on the side, and you have a wonderful meal!

Chicken Noodle Casserole

1 cooked chicken breast, cut into cubes
1 can cream of mushroom or cream of chicken soup
1/2 cup sour cream
1 1/2 cup egg noodles, cooked
1/4 – 1/2 cup panko bread crumbs
Add pre-cooked peas, mushrooms, broccoli, or mixed veggies (optional)

Mix soup and sour cream, add chicken and noodles (and optional veggies), top with bread crumbs and heat in oven for 30 minutes at 350º F.
