Living Solo: Chicken and Noodles Paprikash

In the freezing Georgia weather, with the fireplace working overtime and the furnace on a mission, my focus is staying warm without dreading the upcoming electric bill. Today’s game plan: dodge the fast-food urge, avoid mindless snacking, and skip the easy microwave meals.

What’s on the menu for that comforting fix? Paprikash is a hearty Hungarian stew made with paprika. Back in the day, my grandma would make veal paprika, sometimes swapping out turkey breast for the veal because it was less expensive. Since I can’t eat veal for some odd reason, turkey or chicken breast is a tasty substitute.

Picture this paprikash over egg noodles or rice – simple yet satisfying. Dumplings, spaetzle – take your pick!

This recipe’s a winner, sized just right for two or a couple of solo meals (and yep, it heats up just fine). It calls for fat-free yogurt to keep things low-cal, but if you don’t have it in the frig, sour cream works just as well in the same amounts. Keep warm, and stay full!

Chicken and Noodles Paprikash

1 tsp olive or vegetable oil
1/2 lb skinless, boneless chicken breasts cut into 1/2 inch strips
1/3 cup plain fat-free yogurt (or sour cream)
2 tsp all-purpose flour
1/2 cup reduced-sodium chicken broth
1 tsp chopped fresh or 1/4 tsp dried thyme leaves
1 tsp sweet paprika
1/2 onion, cut into thin wedges
2 cups hot cooked egg noodles (about 4 oz)

Have all your ingredients ready as this prepares fast.

Heat the oil in a 10-inch skillet (non-stick preferred) over medium-high heat until hot; saute the chicken in the oil for 3-4 minutes or until no longer pink in the center; remove the chicken from the skillet, and keep it covered so can stay warm.

Mix yogurt and flour together and set aside. Heat broth, thyme, paprika, and onion to boil in the skillet; reduce heat. Simmer for about 2 minutes, stirring occasionally, until the onion is tender. Gradually stir in the flour/yogurt mixture into the broth, and cook, stirring constantly, until thickened. Do not boil! Stir the chicken into the sauce and cook about a minute longer. Serve over noodles.
