This quick dessert uses ingredients you may already have in your pantry. The prep time is very short, and with 2 minutes in the microwave, it is excellent for the last minute. It is the perfect sweet ending to your dinner and only has about 140 calories.
Quick Apple Pie Crumble for One
1 apple (diced into small pieces)
1/4 tsp apple pie spice (see homemade recipe below)
1 tsp sugar
1/2 sheet graham cracker, crumbled
Instructions:
Put the apple pieces in a microwaveable dish. Add the sugar and apple pie spice and toss to cover. Lightly cover with wax paper or paper towel and microwave for 20 seconds; stir occasionally and microwave for an additional 10 seconds until the apple is soft (time may vary based on microwave power). Sprinkle the graham cracker on top (I used a whole graham cracker for extra crunch).
Apple Pie Spice Mix
- 4 teaspoons of ground cinnamon
- 2 teaspoons of ground nutmeg
- ½ teaspoon of allspice
- ½ teaspoon of ground cardamom (It does add flavor. Omit if you wish, but increase allspice to 1 tsp.
- ½ teaspoon of ground cloves (optional)
- ½ teaspoon of ground ginger (optional)
Mix and store in an air-tight container.
